CHARACTERISTICS OF THE CLASS:
The Food Service deputy coordinates specific task areas as prescribed by the Food Service sergeant. They work in close coordination to provide all meals, which are prepared in accordance to the 28-day cycle menu. The Food Service deputy will inform the Food Service sergeant of any events regarding unusual occurrences within assigned duty areas. The Food Service deputy reports directly to the Food Service sergeant.

ESSENTIAL JOB FUNCTIONS:
A. DAY TO DAY OPERATIONS
- Assist the Food Service sergeant with food service area.
- Instruct Hernando County Sheriff’s Office members and assigned inmates in the safe and proper use of all equipment in the food service area.
- Ensure the availability and staging of supplies in advance to support menu.
- Oversee the preparation of daily meals and ensures they are in compliance with the daily nutrition and cycle menu.
- Oversee the preparation of special diets to ensure accuracy.
- Provide adequate coverage for shifts as needed in scheduling.
- Must maintain Food Service Management ServSafe certification.
B. INSPECTION
- Conduct and document in Guardian RFID that inmate workers are monitored at the beginning of each shift for health and cleanliness.
- Conduct daily inspections to assure the food service areas maintain compliance with appropriate standards and agency policy.
- Assure proper sanitation and security procedures are followed.
- Work in cooperation with accreditation inspectors maintaining compliance with all applicable standards.
- Review shakedown log book and ensure searches are conducted.
- The Food Service Deputy is to always announce their presence in Housing Units when they are the opposite sex of the inmates in the area.
- Maintain daily, weekly, and monthly reports and records as required by agency policy.
- Maintain inmate worker time sheet documentation within Guardian RFID
- Oversee and supervise inmate worker assignments throughout the Food Service area.
- Assist the Food Service Sergeant with the scheduling of inmate worker assignments.
D. Other Administrative Duties.
- Assume the authority and responsibilities of the Food Service Sergeant during an absence.
- Provide training for inmate worker with the aid of reading materials, training films, computer programs and food handling instructions.
- Inform the Food Service Sergeant of any necessary equipment repairs and submit work orders.
- Maintain accreditation standards.
- Maintain proper filing of paperwork.
- Assist with ordering supplies within the food service area in preparation of all meals.
- Perform additional duties as directed by higher authority.
QUALIFICATIONS:
Training and Experience
- The applicant must be an FDLE certified Corrections Officer.
- Possess a Valid Florida Driver License
Knowledge, Skills, and Abilities
- Knowledge of the application of Agency Detention Directives and detention practices.
- Knowledge of first aid practices.
- Knowledge of CPR.
- Ability to understand oral and written instructions.
- Ability to react quickly and calmly in an emergency.
- Ability to work closely with others in a team.
- Ability to prepare and present clear, accurate, concise and objective written and oral reports.
- Ability to enforce the law, with use of control matrix, tact and impartiality and to deal courteously with peers, officers and the public.
- Ability to recognize and understand the emotional and physical reactions of new intakes, inmates bound for court and anyone else that is functionally required in the booking section.
ESSENTIAL PHYSICAL SKILLS:
- Ability to maintain an above average physical condition and to be able to physically maintain control of an inmate.
- 20/20 Vision (Corrected)
- Ability to crawl ten yards
- Ability to drag or lift or carry 150 pounds 25 feet
- Ability to run 100 yards unassisted
- Ability to deal with and fend off verbal assaults
- Ability to walk unassisted
- Hearing: normal language level (assisted/unassisted)
